Gooey Swedish EVOO cake

For a quick yet impressive festive cake this one from pharmacist and nutritionist Sarah Gray's is truly amazing.


INGREDIENTS
1⁄2 cup cocoa powder
1 3⁄4 cups sugar
1 cup plain flour
1⁄4 cup + 1 tablepoon extra virgin olive oil
3 eggs, lightly whisked
1 teaspoon vanilla extract
Cocoa powder, icing sugar to serve

METHOD
1. Preheat oven to 180°C. Line a tin with baking paper, a springform tin is ideal.
2. Sift dry ingredients and mix together.
3. Add oil, eggs and vanilla extract and mix until combined.
4. Bake for 20–25 minutes.
5. The cake is ready when it’s firm but cracks slightly when touched.
6. Cool before removing from baking tin. Dust with cocoa and icing sugar and serve with Greek yoghurt, cream or ice cream.
